Roasted veggie bowls fill up your soul!

I had this giant yam. Peeled it and cut into 1” pieces. Next i took an onion, 2 bell peppers, and a broccoli crown, cut them into 1”pieces, tossed everything in avocado oil salt and pepper and roasted at 425°F for 45 minutes. Had some boiled Yukon gold potatoes on hand and roasted them too.Served the roasted veggies in a big bowl with quinoa. Topped it with some Greek yogurt I mixed some everything bagel seasoning into.Delightful. via /r/vegetarian https://ift.tt/nGtg0OF
